Vegetable Rennet(Paneer Dodi )
Overview
Paneer dodi, also called Withania coagulans, is a small bushy shrub and belongs to the family Solanaceae. It is commonly known as ‘paneer dodi’ or ‘Indian cheese maker’ because the fruits of this plant have milk coagulating properties, and therefore, it is called paneer dodi. Benefits
Vegetarian and Vegan-Friendly:
One of the primary benefits of vegetable rennet is that it provides a plant-based alternative to traditional animal rennet, making it suitable for vegetarians and vegans. This allows individuals to enjoy a wide variety of cheeses without relying on animal-derived ingredients.
Ethical and Environmental Considerations:
Vegetable rennet is often chosen by those who are conscious of ethical and environmental concerns. Using plant-based sources for rennet helps reduce reliance on animal products, contributing to sustainability and animal welfare.
Cultural and Religious Compatibility:

Availability and Accessibility:
Vegetable rennet is widely available and accessible, making it a convenient choice for cheese makers. This availability ensures that a broader range of cheeses can be produced using a plant-based coagulating agent.

Vegetable rennet can offer consistent coagulation properties in cheese-making. This consistency is important for cheese makers who aim to achieve specific textures, flavors, and qualities in their products.
